Horseradish Meat Loaf
- 4 slices wheat bread, ground in a food processor
- 1/4 c. milk
- 1/4 c. prepared horseradish
- 1 egg, beaten
- 2 T. Dijon mustard
- 2 T. chili sauce
- 2 tsp. Worcestershire sauce
- Salt & pepper, to taste
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped onion
- 1-1/2 lb. ground beef
- chili sauce or ketchup, for garnish
In a large mixing bowl, soak the bread in the milk until soft. Next, stir in remaining ingredients and blend until well combined.
Shape into a loaf in a greased casserole dish, adding chili sauce or ketchup to the top of loaf, if desired. Bake for about 1 hour, until browned and cooked through.
Remove from oven and let rest for 10 minutes before slicing.
We usually double the recipe. The leftovers make great meatloaf sandwiches to eat throughout the week.

Spoon Burgers
- 3 lb. extra lean ground beef
- 2 green peppers, chopped
- 2 onions, chopped
- 16 oz. tomato sauce
- 16 oz. stewed tomatoes, undrained
- 8 oz. can chopped green chilies
- 2 T. chili powder
- salt, pepper & paprika, to taste
Freezes very well.
Adjust spices/seasonings to your family's liking.
Since the beef isn't pre-cooked, it really is necessary to use extra-lean. If you'd rather, however, buy fattier beef, pre-cook and drain it first. Adjust cooking times.

Brown Sugar Meatloaf
- 2 eggs
- 1/4 c. ketchup
- 1/4 c. prepared mustard
- 1 c. bread crumbs
- 1 envelope onion soup mix
- salt & pepper, to taste
- 2 lb. ground beef
Sauce Recipe
- 1 c. ketchup
- 3/4 c. white sugar
- 1/2 c. brown sugar
- 1/2 c. apple cider vinegar
Notes: The cooked sauce is really good over mashed potatoes.

Pepperoni Pizza Chili
- 1 lb. ground beef
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1 clove minced garlic
- 2 (16 oz.) cans kidney beans, rinsed and drained
- 1 (15 oz.) jar pizza sauce
- 1 (28 oz.) can diced tomatoes, undrained
- 1 (8 oz.) can tomato sauce
- 1+1/2 c. water
- 1 pkg. (6 oz.) sliced turkey pepperoni
- 1 teas. Italian seasoning
- 1 teas. salt
- 1 teas. black pepper
- shredded Parmesan cheese
- Combine the beef, onion, green pepper and garlic in a large pot. Brown beef over medium heat. Drain grease.
- Stir in the remaining ingredients (except for the Parmesan cheese).
- Bring to a boil over medium-high heat. Lower heat and simmer for at least 1/2 hour.
- Serve with the shredded cheese on top.
